If you love pancakes and bananas as much as I do, but don’t like the idea of eating so many carbs and calories, you HAVE to try these super easy to make ‘banana fake-cakes’ (that’s what I call them 😂).
I never liked the idea of restricting myself to any diet. Mostly because I lack the discipline to do so, and I just can’t imagine not being able to eat the things that I love. I do, however, make an effort to cut down on carbs and sugar as much as I can. Learning how to substitute less desirable ingredients for healthier ones, without having to completely sacrifice our favorite foods, has become my new thing. Here’s a fun & healthy pancake swap for you to try:
Recipe:
1 banana
2 eggs
Butter (for frying)
I added cinnamon and nutmeg & ginger (optional)
🍌 + 🥚 🥚+ 🧈 = 🥞

Simply mash the banana and mix it in with the eggs. Add the spices of your choice. Fry in butter as you would pancakes (you can also use a non stick cooking spray) … and Viola! Banana fake-cakes!
I enjoyed them with some reduced sugar syrup and they really satisfied my craving for pancakes. As a side note, I made these a few times and I noticed that if you use more banana then egg, they will come out very wet and not well formed. The eggs give the cakes a firmer structure, so try to use the 2 eggs : 1 banana ratio.
My two year old, and also the pickiest eater I know, Kenzie, ate about 3 of them. If she loved them, I’m sure you will too!!
