I love when the simplest things can make my daughters happy! I have a couple of Unicorn fans over here, and they all love pancakes for breakfast. So when I found this cute idea on Pinterest, I knew I had to make it for them.
These pancakes can be made from scratch using your favorite recipe (mine listed below), or you could just as easily use ready-to-make boxed pancakes, and they’ll be just as delicious! I used blueberry pancake mix. And what’s even better, you probably already have everything you need, right at home.
Recipe:
Pancakes from scratch
2 cups flour
3 tablespoons sugar
½ teaspoon salt
1 tablespoon baking powder
2 eggs, beaten
1 teaspoon vanilla extract
1 ¾ cups milk
¼ cup (½ stick) butter, melted but cooled slightly
Unicorn Decorations
• Whipped topping (for mane)
• Rainbow sprinkles
• Blueberries (for eyes)
• Sugar cone (for horn)
• Cooked bacon (1 slice for each unicorn, for ears. I used Turkey bacon)
• Skittles (for nostrils. You can also use M&M’s)
Directions for Pancakes
- In a medium bowl, whisk together dry ingredients: flour, sugar, salt, and baking powder.
- In a separate bowl, whisk together the eggs, milk, and vanilla. Then, slowly add the butter.
- Pour wet ingredients into dry ingredients and stir the batter until combined. There may be small lumps. Allow the batter to rest at least 5 minutes.
- Heat a griddle to 300 degrees. Spray with non-stick cooking spray for coat with additional butter, for crispy edges, prior to adding batter.
- YOU’LL NEED TO MAKE ONE LARGE PANCAKE AND ONE SMALLER ONE FOR EACH UNICORN!
Now for the exciting part: LET’S MAKE THESE PANCAKES MAGICAL!
First, you’ll need to place your pancakes accordingly, to mimic and head and snout.
Next, place the eyes (blueberries), ears (bacon) mane (whipped cream) and skittles (nostrils). You’ll have to insert a small slit before adding your candy.
Lastly, add the sprinkles and sugar cone, and VIOLA! How freaking adorable are these?!
This would be an amazing idea for a Unicorn themed birthday party or kid’s brunch. You could even add some food coloring to the batter to make these Unicorns even more magical!
